Sure to be a weekly family favorite. This is an easy recipe that can be done within 20-30 minutes. Cooked on the stove top, griddle, or on your flat top BBQ outside. We use our flat top PIt Boss BBQ and its a great way to cook all at the same time and easy clean up too!
- Prep Time:
- Cook Time:
- Servings: 4-6
Ingredients
- (1 lb.) Kaysen Family Farms Chorizo
- (1 bag) Chipotle Salad Mix
- (1 bag) Shredded Mild Cheese
- Onion
- (1 bag) Corn or Flour Tortillas
- (1 bundle/bunch) Fresh Cilantro
Directions
- Brown defrosted Chorizo in a skillet or on your flat top.
- Dice and add onion once Chorizo is browned. You shouldn't need to drain off any fat, there is usually just enough to sauté the onion in with the chorizo.
- Mix up the Chipotle salad bag and add cilantro (if desired) to salad and set aside.
- Place 1/4 cup of cheese onto flat top, or pan, or griddle. Let melt.
- Once cheese is melted add tortilla on top of melted cheese. Then flip to other side. Toast for a minute and remove from heat. The cheese helps those corn tortillas to stay together when you eat :)
- Add chorizo on top of melted cheese, add salad mixture & additional desired toppings (salsa, guacamole, avocado, sour cream).
Eat and enjoy!
